Cheese Biscuits

1 ¼ cup flour

1 Tbsp icing sugar

1 tsp baking powder

¼ tsp salt

2 Tbsp butter

4 oz grated cheese

1 small tin crushed pineapple

 

Sift flour, icing sugar, baking powder & salt. Add softened butter & cheese.

Drain most of pineapple juice. Puree drained pineapple & add to mixture.

Roll out on floured bench to 5ml thick. Sprinkle with extra cheese, cut into squares & place on greased tray. Bake for 8 mins at 200'C

 
 
Cheesy Puffballs

 

125g grated cheese

3 Tbsp butter

¾ cup flour

½ tsp baking powder

¼ tsp salt

 

Combine all ingredients until blended.

Add a few drops of water to create dough.

Shape into marble sized balls, place on lined, edged tray.

(an edged tray will stop them rolling off.

Bake at 200C for 12 15 mins, until golden brown.

Store in airtight container.

 
 
Cheese Straws

1 cup flour

½ tsp baking powder

3 Tbsp cold butter

1 cup tasty grated cheese

1/3 cup water

 

Combine flour, baking powder & butter.

Add the grated cheese & water.

Roll dough thinly on a floured bench.

Cut into thin straws & place on lined tray.

Bake at 200'C for 15 minutes until golden.

 
 
Corn fritters

 

425g can whole kernel corn (drained)

425g can creamed corn

3 eggs

2 cups flour

2 tsp baking powder

½ tsp salt

Combine ingredients and fry in a pan on baking paper with several Tbsp of oil.

 
 
Crustless corn quiche

 

4 eggs

1 cup milk

½ cup flour

½ tsp baking powder

425g can creamed corn

1 ½ cups grated tasty cheese

2 spring onions

2 rashers of bacon, cooled & chopped

Tomatoes

 

Put the eggs, milk, flour & salt into a large bowl.

Stir in corn, 1 cup of cheese, spring onions, & bacon.

Spray a large glass oven dish with cooking spray.

Toss 23 Tbsp of flour around inside the greased dish to create a thin nonstick pastry layer.

Pour the ingredients into the prepared dish, top with sliced tomatoes & remaining cheese.

Bake for 20 mins at 220ºC.

 
 
Bacon & Egg Flan 200°C

 

400g flaky puff pastry

½ packet bacon

2 onions

1 cup milk

4 eggs

½ tsp salt

1 cup grated cheese

 

Roll out pastry, & press into greased pie dish.

Cook bacon, chop into bite sized pieces, & sprinkle over pastry.

Add chopped onion.

Beat the eggs, milk & salt together & pour on top.

Cover with grated cheese & cook at 200’C for 15 mins.

Turn oven down to 180’C & cook for another 15 mins.
